Ingredients SMALL BATCH for 2-3 people:
1/2 cup heavy cream
3 eggs
1/2 tsp vanilla
1/4 cup coconut flour
1 Tbs almond flour OR 1 1/2 tsp psyllium husk power
1/2 tsp baking powder
dash of salt
1 1/2 tsp Truvia
4 Tbs melted butter
DOUBLE BATCH
1 cup heavy cream
6 eggs
1 tsp vanilla
1/2 cup coconut flour
2 Tbs almond flour OR 1 Tbs psyllium husk powder
1 tsp baking powder
1/4 tsp salt
1 Tbs Truvia
1 stick (8 Tbs) melted butter
Combine cream, eggs, vanilla. In a separate bowl, combine dry ingredients (mix these together evenly). Combine all with melted butter and mix well.
Let batter set (it will thicken a bit) while the skillet warms over medium heat. Spoon batter onto buttered skillet – this works best as small “silver dollar” pancakes.
Serve fresh, these are better when you eat them very warm.
