Ingredients:
1 cup almond flour
1/4 Truvia*
1 cup peanut butter (I recommend Jiff Extra Crunchy)
3 oz dark or semi-sweet chocolate
Combine Truvia, almond flour, and peanut butter. With a cookie scoop or spoon, scoop onto wax-paper lined baking sheet or glass dish (CHECK FIRST to see that this will fit in your freezer). Chill in freezer at least 20 minutes. YIELD approx. 15 balls.
Melt chocolate in 10-20 sec. increments in the microwave. Spoon onto top of chilled peanut butter balls. Keep in the freezer until serving. Thaw just 5 minutes or they get too gooey.
*I always use Truvia Baking Blend as my low-carb sweetener due to the similarity in taste and texture to traditional sugar. My husband can’t stand the bitter after taste of pure stevia.
